Is it possible to set up my Storyline slides so that the user (in our case young children aged between 4 - 11 so not the most patient!) from moving forward or back from a slide until the full slide (including all interactions etc.) have completed?
For example, is it possible to stop the 'forward' or 'back' buttons appearing or deactivate them until the slide is complete or is there a different / better way to manage this?

All you need do is set conditions on the Prev and Next buttons so they only work when all interactions have been completed, e.g variables and object states. Yes, you can.

There is a method described here on how to disable the next button until a user has finished interacting with a slide.

Perfect! That's exactly what I wanted.
To be honest, I'm surprised there aren't better built-in controls for the Next button...
Here is a great option I've used... and it provides you with all the logic!
