Storing User Info

Our current project incorporates some checklists and activities that users are intended to complete outside of the course itself. We had been planning to incorporate these as PDFs the user could download and track external to the course, but the client today asked if the user could input that information directly into the CBT and have it saved/archived so that the next time they access it (we'll be using an LMS), the latest information will be there and they can add to it. My initial response is that this isn't possible, but wanted to first check with the community and see if anyone has had any experience with this?
