I built the interactive and the garbled text appears in Review 360 published straight out of Storyline, but it's normal in Storyline itself. That suggests the issue is coming in at the publish stage. I haven't changed anything about my publish settings from an earlier, working version.
I found an older thread that suggested that it was an issue with having multiple versions of the Roboto typeface installed, which I do, but they are necessary for other assets I've built for this and other courses. Any suggestions?

This issue resolved itself when I re-published the entire project instead of the single slide (which is the entire project).
