To change the language setting, go to the File tab on the Storyline ribbon and click Storyline Options. There you'll see the drop-down menu on the bottom with the language options. After you've changed it you'll need to restart Storyline again.
I managed to sort it by uninstalling and re-installing. I missed the option to select the language choice when I ran the setup. Default language was chinese.
