I'm starting to work on a trial version of Storyline at home while my company is purchasing a valid licence. Can someone confirm me that any project that I'm creating now with my trial version will be usable in a few weeks when I'll be at work with a purchased licence ?

You nailed it! Any project files you work on with Storyline 360 will be saved to your local computer, which you can then access later.
