Depending on what you mean:

In the Edit [quiz question type] menu (above your triggers, on the right), you can set number of attempts to whatever number you like.

Or, if you just want the learner to be able to change answers (without getting feedback on being right or wrong), you can disable the Submit button on the quiz slide and enable the Next and Prev buttons in Slide Properties (right-click in empty space on your slide, or look at the slide in Story View). When the learner enters the Results page for those questions, all questions will submit at once (and at that point the answers will be locked-in, preventing further changes).
