I believe the text entered is lost without an LMS, or similar. I've seen instances where people used Google Sheets to capture the text in very clever ways. A search of these forums could yield some pointers to get your started. Good luck.
You'll get a "TextEntry" variable associated to that essay question. At the very least, you can use a variable reference on another slide in the course where it will populate what the user typed into the essay field. It's possible that they can print that text later, especially if you are referencing it on a Results slide where you enabled the Print Results feature.
