It is possible to send the data feed in 'Text Entry' field to user email in Storyline 2, as I tried through action 'Send email to' but unable to perform.
Have you tried using the Send Email trigger in Storyline 360? This trigger will automatically open up a learner's mail system with the email address already entered in the To section.
