Sometimes the thumbnails do not update WHILE working in a slide, this is a common behavior (image 1). But sometimes they do not update either when working on another slide... This is anxiogenic as I suspect that I inadvertently delete some material (image 2).
Is there a work around ? Or a way to force thumbnails to update (short of saving the presentation ?
No this has been pretty erratic and thus concerning. I have the feeling it happens more towards the end of the day so i go into not only saving the file but closing it and SL3 then reopening... I'll get more screen shots and copies when it happens again. There were no EVENTS in the Event logger.

Sorry to hear that you've run into an issue with this. Are you seeing this behavior within Storyline 3 (here's hoping my memory is working)?
I took a look and was unable to replicate.
Does this happen in any of your courses or just this particular one?
