Storyline currently publishes to Tin Can API version 0.9. I haven't seen any methods to convert that and allow for use with Tin Can 1.0 or later, but if you'd like to see future support for those versions of Tin Can I'd suggest submitting a feature request.
I've seen the Saltbox converter mentioned here a few times. and I think it's important to point out that it does not convert Storyline Tin Can 0.9 courses to Tina Can 1.0. I was told this by the guys at Saltbox.
What it does do is add missing elements such as course and activity titles so that your data is more usable in an LRS.

I am trying to manually convert though, and would like to see the process. I take it there is no documented process out there?

It also won't convert Presenter / Quizmaker content.
