I have a question about whether there is a way to make the font size variable within Storyline - similar to a website or app that has the button to make text larger or smaller.
I know I could "fake" this by using layers, but wondering if there is a way to do this using variables.
I realize it could cause more headaches than it is worth on formatting but thought I would see if anyone has tried this.

besides doing like you suggested there's no direct way of doing this in SL.
I do not know why you want to do this, but if it is for the visually impaired, Storyline is fully section 508 compliant.
It allows you to enter an alternate text (see screenshot) for each visual object and have it read out by a synthetic voice (if present on the machine)
Of course, you can always use the zoom function from your browser
