The words are connected in Arabic and Persian, in other words, the letters are spelled together and a word is formed. Therefore, this problem does not exist in English, but in the Persian or Arabic, the word itself is separated when a part of a word changes color.. I attach the file
Ok, I see what's going on now! I'm really sorry, but we don't currently support coloring individual letters within a word in languages like Arabic and Persian. Please submit a feature request if you feel strongly that this is an important issue.
1) Create the text using another program that supports coloring of individual letters, like Powerpoint, and then paste the text as an image.
2) Use a program like Paint to create two versions of the text, one in each color, then trim the colored letter that you need and paste it over the original text.

I opened your file, but I don't speak Persian so I'm not sure what the issue is.
To change the color, you should just be able to select the letters and then select another text color.
Could you explain the issue you're having in more detail?
