In some older courses, the course title is followed by a time frame of where you are in the course and the total time the course takes. The attachment shows an example with a red box around it. These courses were created by a previous employee, and I can not figure out how this was done. Would someone be able to help me with this?

That was done using Articulate Presenter. If you have access to Articulate 360, you have Studio 360 as part of your subscription, and Presenter is one of the tools in Studio 360. It looks like the previous employee created the course in PowerPoint and published it using Articulate Presenter, the Player for Articulate Presenter does have this timing option in it.
However this is not an option in Storyline (as far as I know) so you won't be able to recreate in Storyline. Sorry about that :( However you can submit a feature request! Hope this clarifies for you Gayle.
