I would like to have a table which the user must complete from memory based on the information they have learned in the course. Is there a way to let them "fill in the blank" and then reveal the answers? I don't need to capture their response, it's just a way for them to review and check their answers?

You could do it using a standard Storyline fill-in-the-blank quiz slide, with a Results slide that lets users Review their answers.
