Jade - I too am in the market for a new computer; right now I use a 13" Macbook Pro, and connect it to a dual monitor that's 24". However, I do a lot of my development on the go, so the 13" gets used more often than not.
My debate is between the 21" and 27" iMac. I'm leaning toward 21" for manageability and space saving though.
At work I have 23" dual monitors. At home I run a 27" Mac and it works really well. I'm considering getting a second 27" monitor. For me the bigger the screen the better.
My 27" has arrived. I now have that set up as my primary monitor with the original 19" set up as my second. It's an absolute dream to work with; I'm really happy with the setup.
I also have them both on desk clamped arm mounts so I can move them around as and when needed. That's a real bonus, which I'd highly recommend.

I'm currently on a 19" which is definitely too small - that will turn into my second monitor once I've bought the new one.
I also recently just got a new desk which is pretty big, so I'm not too concerned about saving space.

i run a 27" mac and had a second monitor that was 24" which I found too small. I've just upgraded the second one to a 27" and love it.

I would recommend dual monitors over one large monitor...
