IACET accreditation -- maintaining course records for 7 years ... anyone have a plan for that?

We are currently pursuing IACET accreditation so we can offer classes to our customers (ILTs) with CEUs.  As part of the IACET standard, we need to have a process by which we can:

9.3 The Provider shall have a process to maintain training records and make them available to learners for a minimum of seven (7) years.

It is our understanding that this applies, even if our company were to go out of business.  

Does anyone out there have a simple solution which would comply with this requirement?
