Ideas for getting started: application training

Hello!  Looking for some ideas to get started... We are an employment service provider (we help unemployed people with barriers find meaningful employment) and here at L&D, we use a combination of Articulate and TalentLMS for delivering staff training as well as client-facing workshops.  

I'm creating an eLearning for staff to help them get a handle on using the LMS for THEIR purposes (like, checking to see if their client did a workshop, or signing them up for a few courses while they job search.)  

We LOVE LOVE LOVE Rise for the client workshops, but I'm not convinced it's the best avenue for systems training.  I'm looking to build a course that has both theory and application in it and intend on using Storyline for screen capture & try mode. 

How have you set up your systems training?  Visual examples would be really helpful!
