I'm drafting a course design document and need to have a definitive answer to this question before sharing the draft with the client.
Do the quizzing templates for drag/drop, matching, and drop-down work on a mobile device (specifically iPad)? I couldn't find that directly addressed in a discussion when I searched.
You would be my hero if you had samples for me to test.

see this KB article that compares flash, HTML5 and AMP by quiz question types.
I would recommend you create a few of the quiz types and test yourself on ipad to make sure it works how you want it to.
