Something that has helped me a lot during the storyboarding & prototyping stage is to actually build a mobile-size protoype with paper.
It allows you to not only visually see how it would look on the screen, but it can also help you understand how the learner may interact (can their hand fit on an ipad, is there too much going on aesthetically, ect)
I'd also recommend reading up on UX design reports - there are dozens upon dozens of great resources there that you can apply to any mobile-based learning.

I am developing training for mobile also and curious to hear some suggestions.
