What do you mean by transaction? Do you mean the different things you're teaching learners how to do? For example, create an account, sign into your account, etc.
If so, I don't think there is an ideal number of those. I think you should try and organize them by use. For example, if someone needs to learn how to create an account, chances are they may need to learn how to sign in as well, so it makes sense for those lessons to be part of the same course.
