Does anyone have any input or suggestions on what software I could use to change my voice when doing voice overs? I am intending to create an elearning project with a male & female character dialogue and I'm wondering what the easiest way to go about this would be!

My first suggestion for any narration is to get a good microphone.
This is key to any good sound recording.
As far as pitch shifting be careful not to change speed when you change frequency. You don't want to sound like the chipmunks.
Try Audacity to start - play with pitch and tone.
