First, I'm not sure what you mean by seeing them in the thumbnail for your set up. Do you mean the thumbnail images of the files, when you're looking in the published output directory?
If that's the case, it sounds like you're trying to view your published files locally. Try uploading your published content to a web server or LMS for testing. If you view a published Studio '09 presentation on your local hard drive or send it to someone else to view on their local hard drive, you'll encounter security restrictions from the computer, web browser, Flash Player, and network that'll cause various features of your content to fail.
To properly test your published content and share it with others, upload it to the environment for which it was published. Please review the following article for details:

The update for Studio was for an issue relating to tracking, I haven't heard of any display issues coming from this.
Also, it sounds like the issue may be related to fonts. If you preview or publish a quiz and no text displays in the published output, the issue is likely related to the installation of Articulate fonts. Please see the following articles for more details:

If that didn't help, try to make sure you're using 96 DPI on your machine. Articulate Studio '09 is only supported with a system DPI setting of 96. If you're using a DPI setting other than 96, you'll encounter erratic behavior in the desktop applications and the published output. The following list provides some examples of unexpected behavior that you may encounter:
* Elements of the application appear misplaced or distorted.
* When previewing, content is distorted.
* The published output is distorted or doesn't display correctly.
* Annotations are misplaced.
* Lengthy slide notes won't scroll when recording narration.
* Your logo doesn't display correctly.
To resolve these issues, change your system's DPI to 96. Here's how:

Also, what option are you choosing to install the update? It shouldn't be prompting you again, if you've already installed it.

I build the quiz and when I preview it, it is blank.

Yes, but how are you viewing the published content? Are you opening the file from your computer, or uploading it to a web server or LMS, etc.?

I opened it just before I posted it and could view it just fine.
However, after I posted it and clicked the link I got another message from Articulate notifying me of an upgrade. (again?)
I clicked ok and ran the upgrade...now back to nothing on preview.
