Frequently when I use the application Peek, I will update the dimensions of the page and go to record. When I go to view the recording, I see that my recording changed the dimension specifications and the recording is incorrect. Does anyone else have this issue?

I'm having the same issue here. Windows 10. I see the issue in Articulate Review. Storyline 360 is also doing the same thing for me.

Sorry to hear that you're having a similar issue.
Is this happening in all recordings using Peek? If so, I'd advise a repair of that install following these directions.
I performed the "repairs" and no change.
