I created an assessment and set Quiz Retries to "none", and then exported it for our LMS. Is there an easy way to allow a user to retake this assessment if needed, on an ad-hoc basis? Or is this something that needs to be done on the LMS side (ie. delete the user's record for the assessment).

I'd look to your LMS for that option, as you said it'll likely involve deleting that one user's record.
