I am creating two identical Rise courses - is there a way to add a hidden subtitle or indicator so that as the author, I know which is which? There is a long story behind the 'why' for this, but essentially I would like it to read Title (X) and Title (Y) in some way.

Rise does not have hidden titles.
We add developer notes and comments (visible to everybody) on the Course Details page.
It still means you need to open the course to see the notes, so not really what you want.
