When I export a Rise course with iframe or embed content, will it pull fresh data whenever the Rise course is launched, or will it only show was there + metadata when the course was originally exported?
Angel is right--you'll see fresh data when you revisit the embedded content. While caching might come into play, Rise doesn't increase that risk. This could happen in other sites, as well.
I have a course where I've used a labelled graphic image with markers. The markers have URLs in the media section. I have found that the metadata displayed when running the course is not fresh from the website, but old data. In this case, displaying old Covid-19 data. Any tips there?
Rise 360 doesn't have control over what appears in the metadata for the website. You can either uncheck the option for the metadata, or you can embed the actual website using an iframe embed code like this one:
