Those numbers are part of the answer feedback and indicates the correct matches for each item. In your example, 3 Water indicates that it matches with item 3 on the right.
If the matching question is part of a quiz, then you can turn this off by unchecking the "reveal answers" option in the quiz settings. Find out more about how that works here.
If the matching question is part of a knowledge check (within a lesson), then unfortunately there's not currently a way to turn that off. If that's something you'd like us to change, please log a feature request to tell us more about your specific needs.
