Putting together a demo course for marketing

Hi all! 

I would just like to know how everybody has gone about creating a demo course for marketing purposes. For example - we are in the early years care and education sector and we are soon to be preparing materials for a stand at a conference.  I would like to be able to showcase some of our course content so customers can see what the course looks like/ what they can expect/ try out some of the activities. Our courses are detailed ( I have used Storyline 360 for some and RISE for the others) with tons of research/ links/ content. Its a balance between ' wanting to show everything we do' and then 'not giving too much away!' .... Any advice much appreciated! Thank you.
