I am working on a Rise course in which I received the files from the developers, and I am moving them into 1 course which consists of 7 chapters with multiple lessons within each chapter. The sidebar is beginning to appear overwhelming, even though each lesson is only a couple of minutes long. I believe a solution would be to have each "chapter" be a dropdown, so that the user only needs to see which chapter they are working on at a time. However, I can't seem to find a solution to this in eLearning Heroes.

There are no drop-downs in the course sidebar menu.
The best you can do is to create Sections to help organize and structure your course. See:

There are no settings for Sections. They are always open by default.
