I have several courses in Rise, and each are different.
I have customised buttoms on a couple, and most recently, for a video only course, when I changed the button from "Start Course" to "Watch Video", I have noticed this has changed the button across my other courses.
I have encountered the same thing, apparently Rise is using "shared" course labels for all of the courses. Basically all of your courses are using the "English" label under "settings -> labels" as a default one (or what ever label you are using in your project), It is a bit confusing since you would think that the labels are course specific but they are not at the moment from my experience.
So to fix this, you need to create course specific labels by creating a new label, doing the changes in there and use that one in your course.
We recommend creating a new label set when you need to customize text labels so you won’t accidentally change the labels in other Rise courses. You can read a bit more about setting up Custom labels and creating label sets for each course here.

No worries, Ari-Pekka. Having shared label sets allow you to easily reuse anything you'd already modified. Hope that helps as you're building Rise courses!
