Are there any block types in the works (or current blocks I may have overlooked) that would allow us to require the user to input text that we can then store to that activity's details as a non-evaluated interaction?

Yes, specifically we'd require the ability to allow any interaction type (most commonly SCORM types fill-in, choice, and other) but for the result to be neutral (not correct or incorrect).
The intention is to get details from the user, not grade them.
