I am experimenting with rise 360 and love the opportunities. I have a lot of old "storyline" content to integrate.
My problem: the Storyline element starts automatically when I start the course. (Video elements only start, when you click on them). Can somebody help me in here, how I can start the storyline element intended (with a click) instead of automatically?

You could do this in Storyline file.
Just have a "start" button of some sort in your Storyline file so that it won't begin in Rise until the learner clicks it.
