With regard to the Start Course and Details labels...when I change them in one course, they change in all of my other courses as well, which is not what I want.
How do I change the labels for one course only please?
If you are using the default English label set, changing the default labels for one course will automatically apply to all other courses for which you are the owner, and that share the same label set.
If you need different labels in each course, create a unique label set for each course and save each one with a different name.
Also be aware that Course Labels are associated with the account of the course owner.
So if you transfer ownership of a course to a team member, your unique label set will not travel with the course and the labels will revert to the Rise default labels.
