We're working on a feature that'll allow you to do just that (and edit the other labels throughout the course)! It's slated for release later this quarter, but I don't have an exact date to share yet. We'll keep you posted as more information is available.
Happy to announce that you can now customize the default text labels in Rise. This gives you the ability to make built-in course elements, such as buttons and lesson headers, say what you want them to say.
