Tag Title SEO for RISE

Hi,

I'm optimizing SEO the title tag of some web pages created with RISE.

I noticed that while entering this code:
     <title> COURSES, ACTIVITIES, PROJECTS | todste.it | Stefano Todaro </ title>

I noticed that the browser always publishes a "| laugh" at the end!
If the string exceeds a certain amount of characters, add Overview!

I looked in the settings in theme, navigation and lable but I did not find any flags or options on the title!

How can I replace Rise with the words of my interest?
How many characters can you enter?
