Assuming you have a LMS in place already, if it's neither (stock quiz) or (freeform), then I think the only other way to achieve grading is via variables and Javascript - but I wouldn't recommend it.
Thank for the quick response Alexandros - I'm not sure I'd even try either of those options anyway, so it's just as well they're not recommended. I'm working on a workaround now. Thanks!

Actually I meant the opposite - as in: Stock Quiz or Freeform = OK, JS = Not really.
What are you trying to do that the stock options don't allow you to, anyway?
