Great point about checking the quiz answer(s) match what type of question it's meant to be! Is there a specific part of the quiz creation that you feel gives you the biggest step up (or as you said, bridges the biggest gap) in terms of efficiency?
For me, it's all of it, to be honest. While I always have a good handle on the objectives and outcomes, I'm not great at writing standard quiz questions. Most of the courses I've developed, since they're heavily software simulation, have hands-on assessments rather than a traditional quiz. If I were building this course in Storyline, for example, I'd likely finish with a "day in the life" simulation, similar to the Scenario block in Rise. My focus is so much on skills and practice that I am little blind to building standard assessments.
