I added a text box at the top of each page that looks a bit like web breadcrumbs so people can see what section & page they're on. Unfortunately, when a greater than (>) symbol is placed between two variables, they don't display in published output.
I tried using a bunch of different fonts in case it was a font issue, but it's the same in all of them. The symbol does not show up in a variable text string, but does show up when it's in plain text (no variable). See the attachments.
I was able to get it to display by creating a text variable with a value of " > ", and inserting that. In case anyone finds this discussion in the future, it's worth having it here.

I just realized my pictures are a bit unclear...
Where it says "this is > than using a variable", it's actually the string that's NOT using a variable.
(it was meant to be punny... in that plain text is greater than variables...) fail :\
