Ideas for Annual Required Inservices

Hi everyone. I have been spending time looking through the showcase and have seen several great examples of ways to create some engaging material on various topics, but I wanted to ask the question here as well as others may have more ideas. Anyway, we do a series of courses annually that all staff in our organization have to complete. We cover topics like managing a safe environment workplace harassment, corporate compliance, HIPAA, customer service, etc...SInce these are seen every year, I like to change the design in order to keep people engaged, but honestly, I'm running out of ideas....so please help.
