Since you can't turn the player volume button on/off at the slide level like you can with the player's next/prev buttons, I was wondering if Storyline would let me use two custom players in one training course.
I’d like to have one player for the slides with graphics and text (no audio), that does not include the volume button. Then I’d like to have a second custom player for the scene/slides with video clips that includes the player button.
Unfortunately, I don't think that what you are asking is possible. If I understand correctly, you want to different player menus where the volume button is on for some slides but off for others?
Right now, that does not seem like an option in SL2. Check this thread
As Alex mentioned, you can't use more than one player in a course. You may want to look at developing your own custom players if you have Flash coding skills using our SDK so that way it could be a more customized look and feel.
