Looks like you can't remove the next / back from the player menu. However, in Story View you can CTRL-A and update all at once using the Slide Properties pane.
In my quick SL2 test, removing all of the buttons and features from the bottom bar ends up displaying a thin bar. If any of the slides in the story contain any of the bottom bar features, the bar is thick throughout.
