Which controls are you referring to? The Player next/prev buttons - you won't be able to modify those on one slide alone, but you could add custom buttons to your slide and trigger them to do those particular things as you wish. I assume by "exit test" you mean, exit course? If you're thinking of something else, let us know!
I added the buttons with triggers. Now, when I use the "Review Course" button I return to the beginning of the course but how do I retain the answers to my quizzes.
What triggers did you associate with the "review course" button? there is a trigger to "review results" which should bring you back to the start of the course and place your questions in "review" mode. Did you also enable the options from the results slide to:
Allow user to review quiz: This adds a Review Quiz button to your result slide, which lets learners go back and review the answers they submitted (but they can't change their answers). To give learners visual feedback on their performance, mark the corresponding box to Show correct/incorrect responses when reviewing.
That would create the trigger and button automatically and then you could customize as needed. Also, make sure your quiz slides are using a revisit property of "resume saved state" to allow the user to return to the quiz question and see their previous answer.

You can change the lables of these buttons in the Player Properties dialog, under Text labels.
