The articulate storyline 2 guestbook feature allows us to track demographic information of the participants. I have currently selected, first name - last name- and department; however, I am occasionally getting anonymous users when I try to track which participants have completed the module.
If I have made first and last name a required field, how are users skipping past this requirement and completing the module? Anyone else experience this issue?

Are you referring to the guestbook feature within Articulate Online? That sounds like what you may be describing.
We had another user mention a similar issue recently, but I see no resolution yet for me to share the outcome with you.
