If you're asking whether or not you can create something than an e-reader can read, then the answer is no. If you'd just like to create a course with a lot of text, like an e-book then yes!
In that case, all you really have to do is insert your text on the screen :) It's very easy. If your content is already set up in a PowerPoint presentation, you can just import it.

You can certainly pop text into a Rise course, however in Rise the output generally has learners scrolling from top to bottom and not left to right, like an e-book. That being said, learners typically prefer that since it's more like the web environment they're used to.

I guess the closest I will be able to come to it is using the two column text block. Sound about right?

Just a single text block, the page turn effect would just be augmentation
