Wanting to do a project for a non-profit for free!

I'm working towards building a portfolio of a few e-learning samples to hopefully help launch a career. So far, I have a couple of short projects to show a little of my abilities but thought it might be a good idea to find a non-profit who might have an e-learning need I could help with.
I'm looking to accomplish the following:
1. Find a worthy organization who has a need an e-learning project might help address.
2. Work with a professional (expert) who will provide the bulk of content needed for the project. I'd like to learn from someone who has produced e-learning previously. I'm hoping to learn a lot about the process through this experience.
3. Work with an organization who will allow the flexibility for me to apply my creativity to the project as I intend to feature it in my e-learning portfolio. I don't want to take someone else's templates and modify.
I'm wondering if anyone out there has done the same and what challenges I might face. Any thoughts appreciated.

Volunteer your skills and sign up to design an elearning project on Global Giveback (http://ngolearning.org/globalgiveback/default.aspx) you could join a team of IDs - and it will help with your portfolio.
