I have done a number of software training webinars. When applicable, I have been able to use small projects and activities as an engagement tool. I find it particularly effective when they are then shared with the attendees. A lot of teachable moments have come from this kind of engagement.
I have also learned the hard way that it is imperative, much like the picking on participants above, that you make this known well in advance. I have encountered upset learners in the past from this technique. Usually it was someone intent on zoning out to begin with, but it's still best to avoid upsetting your learners.
