Hi Nick,
I use Camtasia Studio (http://www.techsmith.com/camtasia.html). Version 8 (8.1 actually) is VERY nice.
I do my audio, though, in Audacity and import it into Camtasia. A few years (and versions) back, Camtasia's audio recording quality wasn't that great, according to my mentor at the time (he knows a LOT about audio recording). So that's how he trained me. I find Audacity to be very easy to use and have continued with this workflow.
Perhaps others can comment on whether Camtasia's video recording quality has improved.
