Digital Signature Submission to Complete
Linking to a JotForm is an idea I haven't pursued since I wasn't looking for an output of an e-signed document, but if you figure it out let me know!
That said, the way this is set up the signature itself is not stored at all. The code bock is set up with the completion requirement, so the continue button is greyed out until they submit a signature. So no signature storage, just a hoop to jump through to complete the course. Frame in another way, it's like making the learner flip a flashcard or complete a sorting activity before they can proceed through the continue button.
To complete the course, the learner completes this lesson by signing and clicking continue. In our LMS the course will show as Complete/Incomplete, which effectively means they've either completed the policy acknowledgement "signature" or they haven't.
