I have a question though...
I take it that it is possible to write some javascript that when you click a button, it changes the colour of a textbox?

Yes... either a shape or the backgroundColor of a textfield. Both possible.
One of Articulate/Storyline's most dreaded things is in my opinion the hidden changes they do, without notice. For example... here is a link https://community.articulate.com/discussions/building-better-courses/storyline-svg-icons
to a previously properly working solution to exactly what you asking about...but when i publish the original it doesnot work anymore. Due to internal changes Articulate did.
This specific case im fixing it now. But i do dislike Articulates way of working in this.

Here i uploaded the fixed version. Articulate added a > div to elements. So the original file failed.
