Hi TinaDenmark-558 as far as I am aware, you can only update colours using the Theme options:
The font size and family will be picked up from the "Normal" font that you have defined in your project before or after you record your sim.
The font colour will be picked up from Text/Background - Light 1 I believe and the caption background colour is Accent 1.
As you'll see in the video, it would be important to get your font size set correctly first, as increasing the size post capture may mean adjusting every caption box again as they do not autofit the new font size.
